Feudal Age Rush with notes on how to transition into all-in, Castle Age or 2TC. I'm kinda of a noob, the guides I write are mostly my experience/intuition and meant for personal use, so take them with a grain of salt.

Vs Ottomans Ayyubids Abbasid Dynasty:
Soft raids with the first few knights. Idle oponent's villagers until you have enough archers. If you can't break their defense, age up and make crossbows to counter camel riders, ghulams and janissaries.
Vs Rus French Jeanne d Byzantines (Hippodrome):
Make a bunch of spears to defend from raids. Separate a few knights to raid and leave the rest at home to defend if you see them commiting hard to feudal age. Otherwise, match their strategy (2TC or FC) while you raid with a few early knights and a bunch of archers.
Vs Delhi Sultanate: Cry
Make a few spears to defend from raids. Separate a few knights to raid and leave the rest at home to defend. Knights should be enough to protect your archers from Ghazis, but Delhi's double production speed and the extra attack speed from the landmark can be quite scary. Try to not get stuck in Feudal Age for long.
I haven't tried this, but opening with 2nd scout and getting extra sheep seems like a good idea, since Delhi's scout will usually try to steal the sheep on your side of the map.
If you feel extra spicy, you can try stealing deer with upgrade to safely get to Castle Age. Doing both secures enough safe 
food, but also forces Delhi's villagers away from their TC, making them more vulnerable to raids.

Separate a few knights to raid and leave the rest at home to defend. French Knights are better than mongol Keshik, so you don't need too many spears, just a few to get good trades and force the mongol archers to move forward.
You can't outproduce a mongol player, you need to quickly transition to Castle Age and make an army of MAA + + (if they also reach Castle Age)
