No 2nd needed even if they build one, but you can if they do, or you plan for a longer game. Off Gold, send to 
Stone while aging, spread villagers in a 4 Food, 6 Wood, 8 Stone split, using the 4 age-up vills once finished until 2nd

Consider your timings. You can make a lot of units in castle and push, but when you approach 200/200 it is time for imperial.
Another timing is your age upgrade that makes them do serious damage again vs age 3 opponent.
Varangian age 4 upgrade is also insane.
In higher ranked games, it's typically over in under 20 min. Generally you should have 2 production buildings at near the
same time you finish age up and be making army non stop. Transition to castle with a purpose, because you are at a disadvantage in early castle if you don't have the resources to use it.
Also never float resources, keep everything under 300 when not planning to use those resources immediately!
